Rhubarb Oats
If you love rhubarb and are looking for creative ways to utilize it, look no further. This is a fantastic breakfast recipe that's easy to make.
Ingredients
- .33 cup coconut milk
- .33 cup water
- .33 cup gluten free quick cooking oats
- 2 oz banana (fresh or frozen)
- 3.5 oz rhubarb (fresh or frozen)
- 2 tsp maple syrup
- 1 tsp grated cardamom
- pinch sea salt
Instructions
- Add water, coconut milk, banana and rhubarb to a pot and bring to a boil.
- Once boiling, add oats, maple and salt and stir often until oatmeal is cooked.
- Sprinkle with cardamom and enjoy.
