Skillet Pork Peppers and Onion

Simple and Quick Healthy Dinner

Ingredients
  

  • 1 pound pork tenderloin
  • 1 T avocado oil
  • 1 bell pepper
  • 1 small yellow onion
  • 5 oz spinach
  • salt and pepper to taste

Instructions
 

  • Heat a large skillet over medium-high heat. 
  • Sprinkle pork with salt and pepper. 
  • Add avocado oil to pan; swirl to coat. Place pork in pan and cook for 5 minutes. 
  • Reduce heat to medium then turn pork over. 
  • Add onions, garlic, and bell peppers and cook 5 minutes or until peppers are starting to become tender, then add spinach and cook 2 more minutes.
  • Slice pork into medallions.
  • Serve over rice and top with salsa.
