Skillet Pork Peppers and Onion
Simple and Quick Healthy Dinner
Ingredients
- 1 pound pork tenderloin
- 1 T avocado oil
- 1 bell pepper
- 1 small yellow onion
- 5 oz spinach
- salt and pepper to taste
Instructions
- Heat a large skillet over medium-high heat.
- Sprinkle pork with salt and pepper.
- Add avocado oil to pan; swirl to coat. Place pork in pan and cook for 5 minutes.
- Reduce heat to medium then turn pork over.
- Add onions, garlic, and bell peppers and cook 5 minutes or until peppers are starting to become tender, then add spinach and cook 2 more minutes.
- Slice pork into medallions.
- Serve over rice and top with salsa.
