Summer Salad with Brussels Sprouts, Kale and Napa Cabbage
The perfect salad for when you are sick of salads.
Ingredients
- 3 oz brussels sprouts shaved
- 3 oz kale trimmed and chopped
- 3 oz napa cabbage chopped
- 2.5 oz pear sliced
- 2.5 oz honeycrisp apple sliced
- 5 oz chicken breast cooked
- 2 T apple cider vinegar
- 1 T olive oil
- .5 T honey
- 1 clove garlic minced
- salt and pepper to taste
Instructions
- Whisk vinegar, olive oil, garlic, honey, salt and pepper together in a large bowl.
- Add Brussels sprouts, kale and cabbage and toss to coat, then let sit for 30 minutes so they soften up.
- When ready to serve, add pear, apple and chicken.
