Summer Salad with Brussels Sprouts, Kale and Napa Cabbage

The perfect salad for when you are sick of salads.

Ingredients
  

  • 3 oz brussels sprouts shaved
  • 3 oz kale trimmed and chopped
  • 3 oz napa cabbage chopped
  • 2.5 oz pear sliced
  • 2.5 oz honeycrisp apple sliced
  • 5 oz chicken breast cooked
  • 2 T apple cider vinegar
  • 1 T olive oil
  • .5 T honey
  • 1 clove garlic minced
  • salt and pepper to taste

Instructions
 

  • Whisk vinegar, olive oil, garlic, honey, salt and pepper together in a large bowl.
  • Add Brussels sprouts, kale and cabbage and toss to coat, then let sit for 30 minutes so they soften up. 
  • When ready to serve, add pear, apple and chicken.
