Ingredients
  

  • 24 oz 2% cottage cheese
  • 1 egg
  • 1 oz cheddar cheese, grated
  • .5 cup gluten free bread crumbs
  • 4 oz broccoli, chopped
  • 11 oz jarred roasted red peppers, chopped

Instructions
 

  • Pre-heat oven to 375 degrees.
  • Mix everything together except the cheddar cheese and add to glass baking dish. Top evenly with cheddar.
  • Bake at 375 for 25-35 minutes, until set and golden in color.
